I´m in a hard decision to take... I am thinking in buying an intake manifold to my stock 302 81 mustang.
The engine hasn´t been modified at all and I´m searching for a manifold with some response but street use mainly. What manifold should I buy? the edelbrock performer RPM or the performer RPM Air-Gap? Any suggestions or opinions will be very useful to me thank you.

Get the Air Gap - it's a very good all around intake.  The Performer RPM is NOT designed for a stock engine.

When I was in the same place with my chevy 350 I actually went with the wieand because it out performed edelbrocks intakes by 5 HP and it was in the same price range roughly. I also added headers and cherry bombs cause in order for your intake to be effective the exhaust needs to breath as well.
